I Think I Can...
Ddicated to all those
for whom life does
not come easy...
Sometimes life is rough.
Ups and downs;
Working hard to reach
the top,
Not fully understanding
What awaits.
One step at a time
Never giving up.

You are not alone!
The scales made us sad again
We forget that the scale is...
Just numbers.
Live well, be healthy,
Know that numbers are
Not what makes
You beautiful...
God made you beautiful!
Living well keeps you that way. :D

Gluten Free and learning....
As mentioned in the previous post, we are learning to be more creative than ever. My diet restrictions have made it necessary. I can have nothing with wheat (not even regular soy sauce), or added sugar. This beef dish was made using bean noodles! We have been experimenting with all differnt kind of gluten free noodles. Gravy made with corn starch intead of flour. Using honey instead of sugar. On, and on, and on... My taste buds have begun to change and appreciate new things.
Our friend, Jeff, has been a huge help also. The upside of all these health issues is that I am learning to eat a more healthy diet. Having to be more creative at home, and at work, has benifited both places. It has also re-energized my creative juices in other areas.
The other upside? I am three sizes smaller!!!!!!

My husband - the chef!
I have become my husband's sous chef. When he is inspired, step back, pull up a chair and enjoy! Now, with my work experience, and his tutelage, I am earning the status of his sous chef. This, I believe, helps re-inspire his creativity. Instead of standing by, awaiting his instruction, I actually offer input. When he tells me what he needs, I truly understand what he needs (usually!). As we are a team in life, we are becoming a team in the kitchen! I love this man.... :D
